Vine Age: Average of 50 years old

Terroir: 60% from Champ Forey (limestone and gravel soil), 40% from Auvonnes (clay, marl soil with small stones)

Viticulture: Certified organic, biodynamic methods

Vinification: Directly pressed, ambient yeast fermentation in used barrels (66%) and in tank (33%), aged for 12 months, minimal SO2 added at bottling.
