"Les Polissons" is produced from 30-year-old vines. This is a generous and open wine that is made to be drunk young. It has broad berry fruits, supple tannins, and refreshing acidity.

Limestone and calcareous clay

Planted in 1995

Short maceration at low temperature. Pumping over and punching down for extraction. Short aging in stainless steel tank with multiple rackings. Light filtration before bottling.
