Spontaneous fermentation in stainless steel with indigenous yeasts, and 4 months of aging in stainless steel sur lie. No fining, no filtration, and just a small amount of SO2 at bottling. An aromatic and tannic orange, with notes of stone fruit, golden raspberry, and a little funk.
