Vineyard/Cellar Stats: Demeter certified biodynamic wine; 10-55 year old vines on clay, loam + sand soils with calcified shells; fermented and aged stainless steel; no temperature control; unfined/unfiltered with zero additions; 12% ABV
Winemaker: Roberto Moretti  

A second wine from Dr. Moretti of Podere Casaccia, his unsulfured rosato. He harvests the Sangio early to preserve freshness and lets it macerate on the skins for 6 hours to pick up the beautiful pink hue, then basically lets it all sit in vat outside during the cooler months to slowly settle. Then puts in the bottle, glues on the label and hand numbers the bottles.
