The vineyards are in areas that are cooler than average which lets the fruit ripen slowly and more completely while retaining high natural acidity and bright aromatics. We farm with no-till practices which helps communicate minerality as a bonus to the ultimate goal: soil health. Our farming, harvesting and winemaking decisions build a wine that’s both vibrant and layered.\u003c\/p\u003e\n\u003cp\u003eNaturally fermented in a mix of neutral French oak barrels, all elongated cigar barrels that enhance structure with increased lees contact. We employ gentle batonnage in the early stages of the wine’s life. After completion of MLF, the wine is aged sur lie. Some lots this vintage were racked off the gross lees early to preserve aromatics.\u003c\/p\u003e\n\u003cp\u003eBefore bottling, the barrels were racked to a stainless steel tank to blend gracefully and tighten up. This wine was bottled without fining and filtration.
