Terroir: From the Cèze Valley in Gard, 450 meters elevation, clay-limestone.
Viticulture: Purchased grapes, organic (certified)
Vinification: 100% whole cluster, 1-week ambient yeast fermentation and maceration, no punch-downs or pump-overs, pressed with a vertical press, aged for 8 months in stainless steel tank, minimal SO2 added after vinification, less than 12 ppm total at bottling.
