Direct pressing as soon as the harvest arrives at the press, alcoholic and malolactic fermentation, without added sulphur, from the arrival of the grapes in the cellar until bottling. The juices ferment slowly without any input in tiled concrete vats. They ferment up to about 12% vol and are kept on the lees for 15-20 months without added sulphur.
