Vinification: After destemming skins stay in contact with juice for 10 hours. Must ferment spontaneously with grape skins thanks to a pied de cuve of native yeasts, the only ones which increase the expression of our Terroir. Aged for 7 months in stainless steel, with frequent stirring of the lees. Natural fining and stabilization, no fining agents added. No filtration.
