Nosiola is a local grape of the Trentino region that was commonly grown until about 15-20 years ago, however, it is now not seen very often. Nosiola or Nosiol as it is also called, was traditionally a light wine, drunk in the evening after a hard day's work in the vineyard. The Cobelli's have preserved this traditional variety which is planted at high elevation and hand picked and sorted. It is fermented in stainless steel for about 8 months to preserve the bright freshness of fruit and spends another 9 months in the bottle before release. It is a wine you can drink young but it ages very well evolving into a complex and beguiling wine.
The grapes are harvested gently by hand to avoid damage. The grapes then fall into a pneumatic press where they are pressed . The fermentation is carried out in stainless steel vats where the wine stays for about 8 months. Before being ready for the commercial market it is rested another 9 months in the bottle.
Our advice is to drink Nosiola even after many years to appreciate the evolution and charm.
