This wine is crafted in accordance with Georgia's ancient winemaking traditions. In early September, our hand-picked grapes are pressed in qvevri -- giant clay vessels -- buried underground using techniques passed down through generations for over 8000 years. After fermentation, the wine is transferred to specially shaped qvevris for 6-7 months of aging on the skins. It is then separated from the skins and aged undisturbed for a further two years before being bottled and allowed to settle for at least three months.
